Winter has set in and the work in the bush has slowed down for now. A few sap lines to replace and tree branches to remove from the lines. Snowshoes are required but that gets us in shape for the tree tapping season to come! read more

The sap is starting to run! The harvesting of the first crop of the year has begun! We look for cool nights and warmer days for optimum conditions. When that happens, the sap pours into the tanks and the steam can be seen rolling out of the stacks on the sugarshack... read more
